Homemade Papparoti for Breakfast

Papparoti cake also known as Mexican coffee buns; crust is fragrance of coffee and crispy; the fillings are soft and moist. This cake is very suitable for use as brunch or dinner with tea.

Papparoti cake has been very popular in the world for a long time, there are many places do and sell the cakes. However, did you know that making Papparoti for healthy breakfast at home is even more delicious outside the shop?

Ingredients of Papparoti


  • 100ml of fresh milk without sugar
  • 20g of flour


  • 30g of sponge cake flour (can use 25g of corn flour and 15g of flour).
  • 320g of flour
  • 4g of salt, 80g of sugar, 7g of yeast for bread
  • 1 egg
  • 20g of milk powder, unsweetened fresh milk 130ml
  • 50g of unsalted butter
  • Cheese, salted butter or chocolate for fillings


  • 65g of unsalted butter
  • 50g of sugar, 65g of plain flour
  • 1 egg
  • 1/2 teaspoon of salt, 4g of instant coffee without sugar (2 packs)
  • 1 teaspoon of cocoa


Making Tazhong

Tazhong used as bread helps the cake after baking is soft, spongy and delicious, not dry when stored for long. To do Tazhong, you mix 20g of flour and 100ml of fresh milk without sugar.

Next, turn the cooker on low heat, power 600W, cooking and stirring until the paste mixture.

Making dough

Mix 320g of flour, 30g of sponge cake flour, 80g of sugar, salt 4g, 7g of yeast for bread, milk powder 20g, an egg, 130ml of fresh milk without sugar and the Tazhong made in above step into a bowl. Use an electric mixer to mix at low speed for 20 minutes.

After 10 minutes, add 50g of unsalted butter and continue kneading for 10 minutes. A total kneading time is 30 minutes. If the dough can be pulled out into a thin film and difficult to torn is succeed. Wrap the dough bowl and incubated at room temperature for 1 hour.

Take out the dough, knead until soft and divided into 8 equal portions. Beating each portion from 2-3 times, laminates and add cheese or salted butter or chocolate in the middle of dough, then rounded.

Put a layer of baking paper on a baking and place on the sheet. Incubate the dough for 1-2 hours in order to the dough is expanded double.

Making Topping (cream on the cake)

Preheat oven for 10 minutes, the temperature is 180°C (convection fan turned on if any).

Use an electric mixer beat 65g of unsalted butter; add 50g of powdered sugar (sugar pulverization). Break 1 egg into a bowl when butter was whipped, add 65g of plain flour, 1/2 teaspoon of salt, 4g of instant coffee without sugar (equivalent to 2 packs), and 1 teaspoon of cocoa .

Note: If you do not have instant coffee, you can make concentrated coffee (10-20ml). You should not use grain of sugar because it is not soluble, cream will not be smooth.

Spread the cream on the cake in spirals. Place the cake in the oven for 20 minutes. Wait until cooked, it can be removed and used immediately.
